Do you like cheese with a bite? This collection is for you. We packed eight blocks of our most flavorful cheeses together in this assortment. Try classics like our eight-year-aged Cheddar or get acquainted with new varieties like the limited edition aged Trappiste Ale-Washed Gouda. This one is perfect for charcuterie plates and wine and cheese pairings.

• Two 6 oz. blocks of our classic Sharp Cheddar
• Two 6 oz. blocks of Fratello, an Italian-style cheese
• One 5 oz. block of our 7-year aged Trappiste Ale-Washed Gouda
• One 5 ox. block of our 15-year Aged Cheddar
• Two 5 oz. blocks of our extra sharp and rich 8-year-aged Cheddar 

*Trappiste is not vegetarian and is made with animal rennet in a separate facility with to avoid cross-contamination.

Mindful Packing & Shipping
We take care to protect the integrity of your cheese in transit. Our vacuum-sealed, hard cheeses are safe outside of refrigeration in transit. If temperatures are above 60 degrees in your location, we ship in insulated boxes with gel ice packs to protect your shipment, at no extra charge.

*Please note that insulated shipping in the summer and to locations above 60 degrees will alter the appearance of this collection as pictured. 

Keep it Fresh Tips: 

• All of our cheeses last a year or more, sealed in the fridge (they should not be frozen - exceptions below)
• Cheese Spreads last 10 months inthe fridge
• Cheese curds should be enjoyed or frozen within 2 weeks of delivery for best flavor; they can be stored in the freezer for up to 6 months

• 15-year Aged Cheddar: Cultured pasteurized milk, salt, enzymes, may contain annatto (color).
• Fratello: Cultured pasteurized milk, salt, enzymes.
