When it comes to smoked cheese, there is no substitute for the real thing. All of the cheeses in this flavorful collection are smoked over a wood fire at our pack house in Barron, Wisconsin. Try them with an IPA, cured meats, artisan mustard, or all of the above!

Mindful Packing & Shipping
We take care to protect the integrity of your cheese in transit. Our vacuum-sealed, hard cheeses are safe outside of refrigeration in transit. If temperatures are above 60 degrees in your location, we ship in insulated boxes with gel ice packs to protect your shipment, at no extra charge.

*Please note that insulated shipping in the summer and to locations above 60 degrees will alter the appearance of this collection as pictured. 

Keep it Fresh Tips: 

• All of our cheeses last a year or more, sealed in the fridge (they should not be frozen - exceptions below)
• Cheese Spreads last 10 months inthe fridge
• Cheese curds should be enjoyed or frozen within 2 weeks of delivery for best flavor; they can be stored in the freezer for up to 6 months

• "Old Smoky" Smoked Gouda: Cultured pasteurized milk, salt, enzymes, annatto coloring.
• "Nonna Mozz" Smoked Mozzarella: Cultured pasteurized milk, salt, enzymes, annatto coloring.
• Smoked Cheddar: Cultured pasteurized milk, salt, enzymes.
• Bourbon Gouda: Cultured pasteurized milk, salt, enzymes, natural bourbon flavoring, annatto (color).
• Smoked Provolone: Cultured pasteurized milk, salt, enzymes.
